Double Boiler for Chicken Essence

Type 1:

Recommended by the sales assistant from CK Tang, seconded by some neighborhood aunties when we were searching for it. Not easy to find.

Ingredients:
1) Black Chicken, 1 for SGD5 or Kampung Chicken, 1 for SGD7.80 (If use Kampung chicken, 1/2 will do.) Ask the stall to chop into 6-8 pieces, remove skin and fats.
2) Chinese Berry 杞子王 around 10
3) Jing Xuan Huai san 精选淮山 1 piece.

Method:
Put the chicken inside the inner boiler with holes, then put the Chinese Herbs inside the inner boiler without holes where the essence will store during boiling. Initially, use strong fire to boil for 10-15 minutes, then turn to small fire to boil for 2-3 hours. After that, turn off the fire, leave it there without open the lid for another 2-3 hours. Finally, open the lid, remove the meat and drink the essence.
